Dates
Dates, oval jewels of the desert, thrive under the blazing sun of distant lands. These fruits, divine to the palate fresh but become ambrosia once they undergo the ancient ritual of drying. After the arcane ritual of harvesting, the sun envelops them in an embrace of light and then gives way to sorting, washing, and storing them in icy crypts. While being the custodians of overwhelming energy, with their 60 percent sugar content, dates are also treasures of vitamins and minerals.
Tunisian dates, different from their Israeli cousins, are distinguished by their more modest size (6-7 g per fruit) and are categorized according to sweetness or moisture (soft, semi-dry, or dry).
Four varieties are renowned and ambassadors of the faraway lands: Deglet Nour, Kenta, Aligh and Kuwat.
